Yellow potatoes already have a beautiful, vibrant color, which makes them super easy to present as an elegant meal. Add a few, carefully chosen seasonings and cook them to perfection as demonstrated in this recipe and you’ll have yourself a dish that is as beautiful as it is delicious. The results of this recipe are truly mind-blowing. The potatoes come out soft yet crisp with a firm, crusty exterior. Serve these potatoes at dinners, parties, and all sorts of occasions, and excite everyone. Let’s go over the recipe for boiled and baked yellow potatoes.

Ingredients for boiled and baked yellow potatoes

Yellow potatoes: I used about two pounds (roughly 1 kilogram) of potatoes in this recipe. I like to use medium-small potatoes that I halve into bite-size pieces before cooking. You can also use larger yellow potatoes in this recipe. Just cut them into bite-size pieces.

Butter: Use it melted or softened. Butter adds flavor to the potatoes, and it boosts the crisping effect.

Olive oil: This also contributes to making the potatoes crispier when baked and as we may all agree, the flavor and aroma of olive oil, while subtle, are game-changers.

Paprika: For both color and flavor. The deep red color of paprika complements that of the yellow potatoes giving you a dish that is appetizing and beautiful to look at.

Onion powder and garlic powder: Besides their beautiful aroma, these are powdery, so they do a good job of coating the potatoes and creating that crust when the potatoes are baked.

Black pepper: For a little bit of zing on the potatoes. Also, freshly cracked black pepper that is on the coarse side adds a great look to the potatoes’ exterior. I don’t know how else to put it.

Salt: Add about a quarter teaspoon of salt to the potatoes at the beginning (when boiling them) and combine the rest with the dry seasonings. Boiling the potatoes with salt allows them to absorb it better.

Fresh parsley and carrot for garnishing: I chose not to chop my parsley for this recipe. I just plucked single leaves and quite loved the results. As for the carrot, I cut a piece and sliced it into thin strips. I believe there are many other ways in which you can garnish this dish. Pick two or three contrasting colors and have fun!

Steps

Preheat the oven to 400F.

#1. Peel the potatoes. While most recipes for yellow potatoes do not require them to be peeled, in this particular one, I recommend that you peel the potatoes for the following reasons: (1) peeled potatoes will hold the seasoning better than non-peeled ones. The yellow potato peel is too smooth, and the seasonings will easily slide off it. (2) you will achieve a more evenly crusty and crispy exterior with peeled potatoes.

#2. Place the potatoes in a pot and season with salt. Add a cup of water, cover, and cook for 10 minutes. This step is what really creates the difference with potatoes that are baked from scratch. Boiling not only cuts down on baking time but also allows you to achieve a whole different kind of texture on the potatoes – the inside will be super soft, basically melting in your mouth, while the exterior will be crispy from baking. Perfect, I tell you. Just keep it at ten minutes. Do not exceed boiling time, or the potatoes could cook through and crumble in this next step.

#3. Drain any excess liquid from the potatoes and place them in a large bowl. Quickly add melted or softened butter followed by olive oil. Use a spatula to gently toss the potatoes until they are all evenly coated. Note: the secondary goal with tossing the potatoes is to get them to slightly chip off on the exterior, and that is what will create the crust that I keep obsessing about. So, if you see potatoes chipping as you toss them, that’s alright. As long as they are not breaking apart.

#4. Mix all the dry seasonings, including a little more salt if needed, in a bowl. Then, sprinkle the seasoning mix on the potatoes and toss further until all pieces are well coated.

Baking the potatoes

#5. Transfer the potatoes to a lined baking sheet and spread them out evenly. Bake for 20 minutes. Mine were ready at that point because they were quite small yellow potatoes. If you think you need to bake for a little longer, that’s okay. Just note that the potatoes will brown first at the bottom, so you might want to check that they do not darken. I take mine off when the bottom has browned to a desired level, and when plating, those are the sides I put up.

How to store leftover baked yellow potatoes

Allow the potatoes to cool down fully. Place them in an airtight container and refrigerate for up to 3 or 4 days or place them in the freezer where they will be good for several months. I try to use mine within three months.

How to reheat leftover baked yellow potatoes

You can reheat baked potatoes in the microwave, regular oven, or air fryer. To reheat in the microwave, place the potatoes in a wide plate or bowl and heat until hot enough. If reheating in the oven, preheat the oven to 350F. Spread the potatoes on a baking sheet and bake until heated through (probably 15 minutes). Spray the potatoes with cooking spray before placing them in the oven for additional crispiness.
