We’re taking the regular “just add water” recipe up a notch here by adding bananas, eggs, butter, and milk because if we can make our pancakes more wholesome and awesome, why not? You will need pancake mix, ripe bananas, eggs, milk, butter, and ground cinnamon. All these are affordable ingredients that you can easily find in any grocery store.

#1) Selecting the bananas: Go for overripe bananas for this recipe. Those with black spots on the skin. Those bananas will add both sweetness and a great aroma to your pancakes. The riper your bananas are, the sweeter your pancakes will be. Also, the Times of India notes that overripe bananas are beneficial to heart health as they are richer in essential minerals.
Peel and mash the bananas in a large bowl. Then, add eggs and butter to the bowl and whisk to combine all.
#2) Use unsalted butter: salted butter will make the pancakes quite salty. Only go for this option if that’s the taste you prefer. Remember, the pancake mix also contains a significant amount of salt.
#3) Add milk to the banana-egg-butter mixture and whisk. If you wish to use a mixer, only use it to beat the wet ingredients. Do not use it once you add flour because pancake batter only needs light and gentle mixing.
#4) Combine the pancake mix with cinnamon using a whisk or a spoon in a separate bowl. If you need to use all-purpose flour for this recipe, then add one teaspoon (leveled off, not heaped) of baking powder to one and a half cups of all-purpose flour.

In my experience, children are more fascinated by these tiny pancakes compared to the regular-sized ones. If your toddler, preschooler, kindergartner, or even a little older kid is generally not a good eater (and many do fall into this category depending on the stage they are in) or they struggle to finish their breakfast for whatever other reason, you should try this tiny pancake trick. Believe me, it works! You will see them gobble that meal down with wide smiles and while doing so, hilarious, curious questions will constantly be coming your way.
Use the same batter from the recipe above to prepare these tiny pancakes. Measure 1 tbsp of batter onto the frying pan and cook as you would normally, flipping over once the bottom is brown. If your frying pan is wide enough, you can make up to six or more tiny pancakes at a go. Drizzle and top the tiny pancakes with berries, banana slices, etc. My toddler and I both love strawberry preserves on our pancakes, so that’s what we spread.
Storing Leftover Pancakes
Freeze any remaining pancakes to preserve freshness. I’ve observed that they lose that freshness quickly and sort of begin to crumble or easily fall apart when you keep them in the fridge for over 2 days.
To prepare the pancakes for freezing, use separators like parchment paper or aluminum foil pieces between the pancakes to prevent them from sticking together.
Reheating Leftover Pancakes
Pancakes heat up quickly and perfectly in the microwave. Place a piece on a plate and heat for 30 seconds. Flip it over and heat it for another 30 seconds. Do not overheat pancakes or they will dry out.
If reheating several pieces of pancakes at once, do not pile them up. Instead, spread them out with only a little overlap. Flip each over midway for even reheating.
