Sautéed Cabbage with Carrots and Bell Peppers

Sautéed cabbage is best when crunchy. Please do not overcook.

Ingredients

  • Cabbage – ½ a head

  • Onions (red) – 1 small

  • Carrots (grated) – 1 medium

  • Green bell pepper – ¼ a head

  • Cooking oil – 2tbsp

  • Salt to taste

Directions

  • Divide a medium head of cabbage into two halves. Use just one half for this recipe.
  • Get rid of at least two external leaves as they are most likely ruined and dirty from all the handling.
  • Chop the cabbage into relatively fine pieces (see instructions on how to do so below) and place in a large bowl.
  • Grate the carrot using the side of the grater with the smaller, one-way cutting edges. Add it to the bowl with the cabbage.
  • Chop the bell peppers into small pieces and add them to the bowl with the cabbage. I prefer green bell peppers for this recipe. However, if your cabbage is too green, consider using the red bell peppers for added color.
  • Mix the three vegetables in the bowl until well incorporated.
  • Chop the onion into small pieces.
  • Heat the cooking oil in a pot or large frying pan. Add onions and fry until slightly brown.
  • With the heat on high, add the cabbage mixture and sauté for about two minutes or until it is all wilted and cooked. Use a strong spatula to turn and mix the vegetables as they cook to ensure even cooking.
  • Add salt to taste and mix well.
  • Serve with your favorite dishes (see serving suggestions below).
