Scrambled eggs – easy peasy, right? Did you know that the secret to perfectly soft and moist scrambled eggs is adding a liquid (water, milk, cream, etc.)? In this recipe, I added water. Just water and the difference is magical. But it is not just the addition of a liquid that gives you perfect eggs. Read on to see the simple steps you’d follow to prepare fluffy and flavorful eggs that make a perfect breakfast for the whole family.
How to make the perfect scrambled eggs
Many people cook eggs in so much hurry and with minimal care, and they hardly realize that they are doing it wrong. Dry, browned eggs, for instance, not only lose flavor but are also less nutritious. That brownness indicates overcooking and hardening of proteins, which then causes dryness and lack of flavor (read more). Despite being a quickly fixable dish, eggs deserve some TLC as well if you wish to enjoy and obtain nutrients from them.
What determines the awesomeness (or lack thereof) of your scrambled eggs is usually a combination of factors. You would need to observe all of those factors for you to make perfect eggs. Otherwise, breaking one of the rules could mean ending up with an undesired result. These factors include liquid addition into the eggs, whisking of the eggs, the level of heat when cooking, and cooking time.
Liquid addition
As I mentioned earlier, the secret to perfectly soft and moist scrambled eggs is adding a liquid. This can be water, milk, or cream. Milk and cream, of course, will add their own flavor to the eggs and make them creamier. However, if you are going for simply fluffy and moist eggs with the original egg flavor, then I suggest you add just water. Water will do the magic of fluffing up the eggs as the steam evaporates and leaving them tender and moist, as this recipe also explains. In adding water, though, be careful not to overdo it as that could spoil the egg texture. A tbsp of water per egg suffices.
Whisking of the eggs
Take time and beat or whisk your eggs thoroughly. Do not do a quick swirl and move on to cooking. Inadequately beaten eggs will have streaks of white and yellow indicating that the egg whites did not mix properly with the yolk. As we all know, those two parts of the egg have absolutely different textures when cooked. You do not want that uneven texture in your scrambled eggs. Besides, beating the eggs enough will ensure that enough air is incorporated in them and thus, they will be fluffy when cooked.
The level of heat when cooking scrambled eggs
If you ask me, I think this is where a lot of people go wrong – heating up the frying pan until the oil in it is smoking hot before pouring in the beaten eggs. The resulting product is always browned, dry, and rubbery eggs with less flavor and nutritional value in them. Keep the heat on medium-low instead, and let the eggs cook slowly. Perfectly done eggs should be yellow with no browning at all.
Cooking time
Eggs cook quickly, so take them off the heat as soon as they are ready. In relation to this, do not let the eggs ‘sit’ without turning for too long or browning will happen on the underside. Turn and move your scrambled eggs around in the pan throughout the cooking process. Take off the heat as soon as the runniness is gone, and the eggs are holding together in beautiful, moist lumps.

Eggs – 4
Water – 4 tbsp
Cooking oil – 2 tbsp

Directions
- Break the eggs into a bowl
- Add water and salt to taste.
- Whisk or beat the eggs using a fork for about a minute or until well mixed and aerated.
- Heat a frying pan on medium-low until hot.
- Add the beaten eggs and use a spatula (rubber or wooden) to move, mix, and flip the eggs as they begin to cook and hold together. Ensure even cooking by moving and flipping frequently.
- Take off the heat when fully cooked.
